Sunflower seeds from different cultivars provide oil that varies markedly in monounsaturated and polyunsaturated fatty acid content. See the article by Ashton et al. (pp. 320-326). Illustrated is a detail of "The Sunflower" by Gustav Klimt (1862-1918), an Austrian artist whose multiple styles reflected the tumultuous period in which he worked. He has been labeled a modernist, impressionist, symbolic fantasist, German expressionist, and precursor to art nouveau. Many of his works were considered scandalous and some were destroyed by the Nazis. This painting was produced about 1906-07 and is in a private collection.
