About the Cover

Cover Figure

Soy foods have been eaten for centuries in Asia and only recently gained widespread popularity in the West for potential health benefits. The study by Uesugi et al. (pp. 97-102) reports beneficial effects from ingestion of soy isoflavones in Japanese women. Just as research describes conflicting data on various health endpoints from isoflavone consumption, this painting combines contradictory types of women. "Five Beautiful Women" by Katsushika Hokusai (1760-1849), a hanging scroll 86.4 by 31.8 cm, is reproduced courtesy of The Seattle Art Museum, Margaret E. Fuller Purchase Fund.
