On the cover: Almonds (Prunis dulcis or Amygdalus communis) have been cultivated for consumption of their seeds since 4,000 years ago making them the oldest nut crop. They are believed native to Western Asia and the Mediterranean region. Almonds are high in monounsaturated fat, magnesium, calcium and dietary fiber. The nuts have been used to make "flour" and milk. See the article by Spiller et al. (pg. 195). "Sprig of Almond Blossom in a Glass" (1888) by Vincent Van Gogh (1853-1890) while the artist lived in Arles, France.
