About the Cover

Cover Figure

On the Cover: High intake of magnesium is associated with lower blood pressure, decreased heart disease and, in this issue, lower fasting insulin levels. See the paper by Fung et al. (pp. 533-538). Clam juice is one of the richest sources of dietary magnesium, when expressed on a caloric density basis. This example demonstrates that energy adjustment, while generally accepted, may not always produce meaningful results since satisfying the RDA from this one food source would require intake of 80 cups of clam juice. A Clam Bake (1873) by Winslow Homer (1836-1910) is a watercolor, gouache and pencil on paper. Copyright the Cleveland Museum of Art.
