On the Cover: Lutein and zeaxanthin are the only carotenoids that are concentrated in the human macula. Although relatively minor dietary carotenoids, their consumption is associated with lower incidence of ophthalmic problems. While available from a variety of plant sources, egg yolk provides the highest bioavailability of these carotenoids. See the paper by Ribaya-Mercado and Blumberg (pp. 567S-587S). "Copper Cauldron with Three Eggs," 1734, by Jean-Baptiste-Siméon Chardin (1699-1779), a French painter.
