Historically, undernutrition has been thought to be a fundamental problem in developing countries, but globalization has brought rapid and pervasive change to lifestyle and diet in such countries, and with it the health-related problems of overnutrition. Few studies have been done examining dietary intake in developing countries such as Vietnam. See paper by Kusama et al. (pp. 466-473). The map on the cover both indicates and is emblematic of the complexity of this Southeast Asian nation whose diet represents its own traditions and increasingly those from around the world.
