Milk has been consumed by humans for a hundred centuries or more. Yet it is a very complex food with many bioactive components, many still to be determined, and remains of significant interest to science and medicine. See introduction by Helen Bishop-MacDonald ( pp. 525S). The cover presents a very simple, yet evocative image of the presence of milk in the lives of persons who consume dairy products.
