Fe deficiency is a continuing health problem in developing countries due largely to poor bioavailability of Fe in widely eaten grains with high phytic acid content. This is especially so for corn tortillas which, unlike wheat breads, are difficult to fortify with Fe. See paper by Hernández et al. (pp. 20-25). Tortillas have a history of many centuries, perhaps thousands of years. One of the first depictions of tortilla-making to leave the Western Hemisphere is found in the Codex Mendoza, a very large collection of pictures of Aztec life, sent to Spain in the mid-16th century, but captured by the French in passage through the Caribbean. The cover photograph, of a mother with her daughters doing the laborious traditional task of tortilla-making, was taken in El Salvador about 1900.
