Barley, a grain cultivated and consumed by people and animals from ancient times, is hardy, adaptable and valued for its usefulness in malts, cereals, soups, baked goods and as a base in various foods. In addition to other nutritional contributions, high amounts of soluble �-glucan in barley products may exert beneficial effects on glucose tolerance and blood lipids. See paper by Casiraghi et al. Pliny the Elder, who studied widely and wrote nearly as widely on human activities, including the growing of plants and their preparation as food, thought barley the oldest human aliment (Naturalis Historia, Liber XVIII, Caput XIV[72]).
