On the Cover: Researchers suggest that non-dialyzed soybean protein hydrolysate (NSPH) may decrease lipid accumulation in the liver and have a hypolipidemic effect by enhancing excretion and inhibiting absorption of lipids. See paper by Yang et al. (pp. 416-423). Soybean is a species of legume first found in prehistoric East Asia, but introduced into Europe and North America in the Eighteenth Century. Primarily used for its oil in cooking and as animal feed, it is increasingly consumed by humans directly and in processed food such as tofu and soymilk. The image of the bean ripening on the plant is the work of a United States Department of Agriculture employee, taken or made during the course of the person's official duties.
