On the Cover: Probiotics, a word derived from the Greek and meaning “for Life,” are defined as live organisms that, when ingested in adequate amounts, exert a health benefit on the host. Emerging evidence indicates prophylactic and therapeutic utility for probiotic consumption in health and disease (pp. 679S–694S). One of many foods containing probiotics is yogurt. The cover image is of a bowl of Turkish cacik (pronounced as “JaJik”), which is made especially during the hot summer months. Cacik is served to accompany a main course or as an appetizer. Ingredients include plain yogurt, diced or grated cucumbers, cold water, crushed garlic, extra virgin olive oil and salt. A very small amount of white vinegar can also be added. Often, a garnish usually of minced fresh dill and mint (as seen here in the cover image), is placed on top.
