On the Cover: The following Supplement to the JACN reflects an updated review on the nutritional and health benefits of consuming dairy products, with the aims to 1) examine the role of dairy in meeting the recommendations for the shortfall nutrients in the American diet, and 2) review the evidence on the relationship between milk and milk product intake and chronic disease risk in the following four areas: bone health, insulin resistance syndrome and type 2 diabetes, blood pressure, and weight management. The cover image of a black and white Holstein set on a hill against a ranging background of farms and farmland gives a sense of the breed's strong presence in the United States. Developed in what are now the Netherlands, especially in the two provinces of North Holland and Friesland, Holsteins today make a significant contribution to the 9.3 million dairy cows producing around 188 billion pounds of milk a year in the United States.
