On the Cover: Lycopene intake has been associated with decreased risk of several types of cancer. Tomatoes supply more than 80% of the lycopene in the diet. Even though tomatoes are prominent in Mediterranean cuisine, tomatoes were not well received in Europe when introduced in the 16th century and were used more as botanical specimens than dietary staples at that time.
