Researchers have found that flavanoids, including epigallocatechin gallate (EGCG), which is a key bioactive ingredient in tea, are associated with a wide range of health benefits, related to the prevention and control of cardiovascular disease, diabetes and obesity (pp. 362S-402S). Green tea, which is neither fermented nor artificially processed, contains high levels of EGCG. Tea is grown throughout Asia, especially in China and Japan, and is swiftly regaining the popularity it historically had in the West.
