On the Cover: Researchers studying the effect of an extruded muesli product based on oat β-glucan on the rate of gastric emptying, postprandial blood glucose and satiety in healthy subjects have found that, when 4g of oat β-glucan were consumed, it led to lower postprandial blood glucose levels, but interestingly the rate of gastric emptying and satiety were not significantly changed (see Hlebowicz et.al., pp.470–475). Oats have been valued historically nowhere more than in Scotland, whose wet, cool summers are ideal for their cultivation. Oats remain basic to the Scottish diet, and those exported from the country are highly prized in the selling. Known as corn in Scotland, and in Ireland as well, oats contribute well to the hardiness of the Celtic cuisine.
