In a study which examined the effects of MCT (medium chain triglycerides) oil consumption, as part of a weight loss diet, on metabolic risk profile compared to olive oil, St-Onge et al. (pp. 547-553) obtained results that suggest that MCT oil can be incorporated into a weight loss program without fear of adversely affecting metabolic risk factors. MCFA (medium chain fatty acids, the fatty acids found in MCTs) are present in greatest concentrations in coconut oil, but can also be found in butter, palm kernel oil and camphor tree drupes. The cover image, a photograph of a traditional bullock-powered coconut oil mill, in which dried coconuts are crushed and the oil squeezed out, was taken in the Seychelles by Dino Sassi (Marcel Fayon, Photo Eden LTD) and is in the public domain.
