On the Cover: This month's cover is a photograph of Simmental cows resting in a Swiss pasture. This brown and white breed originated in the Simme Valley of Switzerland and is among the oldest and most widely distributed dairy cattle breeds in the world. Milk and dairy products have been recognized as important human food sources from as early as 4000 BC, as evidenced by the depiction of dairying in rock drawings from the Sahara and from cheese remains found in Egyptian tombs dating back to 2300 BC. Over the centuries, advances in the dairy sector have come to offer great variety to the consumer. More recently, considerable scientific research on the nutritional value of milk has prompted dietary guidelines around the world which recommend daily consumption of dairy products for overall health.
